Turmeric rhizomes are hand-harvested, once the leaves dry and the roots mature naturally.
They're boiled gently to reduce bitterness and lock in color.
Then, they're sun-dried for 10-15 days under open sky, never in dehydrators.
Once dry, they're stone-ground in small batches, without heating the spice so the curcumin, flavor, and aroma are all intact.
